Vegan Pine Nut & Pea Pesto

We are a company full of pasta lovers at The Confidence Co. Pesto is one of our favorite sauces to make. Whether you are vegan or just intrigued, this will not disappoint. Not only is it easy to make, this recipe is a great source of protein from the peas and pine nuts. This serving of sauce pairs well with a pound of pasta.

Ingredients

2 Cups of Basil

1 Cup of Pine nuts

3 TBSP Olive oil

1 TBSP Garlic

Juice of 1 Lemon 🍋

1 TSP of salt (feel free to salt to taste)

1 cup of peas (if they are frozen, microwave or boil them prior to mixing).

 

Instructions:

Blend all the ingredients in a blender or food processor, and blend until smooth. Add to pasta, we prefer it with a thicker noodle like bucatini (as pictured). Prepare to be impressed!
