Shrimp Pad Thai

Ingredients

Shrimp Pad Thai

  • Pad Thai Rice Noodles (Lotus Foods is great)
  • Bok Choy
  • Shredded Carrots
  • 1/4 White Onion (thinly sliced)
  • 1/2 lb of Shrimp (remove tails if they aren't already) 🍤
  • 1 TBSP Olive Oil
  • 1 TBSP Chopped Garlic

 

Sauce

  • 1/2 Water (bonus if you use the pasta water)
  • 1/2 Cup Tahini
  • 1/4 Cup Soy Sauce
  • 1 TBSP Sesame Oil
  • 1 TBSP Ginger
  • 1 TBSP Garlic
  • 1 TBSP Honey
  • 1 TBSP Chili sauce

 

Garnishes

  • Fresh Parsley Chopped
  • Sesame Seeds

 

Instructions

Bring a pot full of water to boil, to cook the pasta. Cook the pasta per instructions.

While you wait, in a pan or wok, on medium heat, put some olive oil and chopped garlic. Add the onions & carrots. Cook until the onions become translucent. Then add the bok choy (slice into halves or fours depending on size) and the shrimp. Let the shrimp cook on 1-2 minutes per side. Once they are cooked thoroughly, add the pasta and slowly mix in the sauce. Heat should be on simmer at that point. Transfer to dishes, add the garnishes, pop an enzyme, and enjoy!

 

Instructions for the Sauce

Add all the ingredients together in a blender, and pour into the wok (per instructions above). I always keep a little extra (you will have plenty), and use it in a rice dish later in the week.
